Our freshly roasted coffee is at its peak during the first five weeks after roasting, after the first 24 – 72 hours when the degassing process occurs. Coffee is all about your taste preference. Coffee beans lose just a little flavor and complexity each week after the initial five weeks. Just like any other produce item, once coffee is ground (cut) the optimal storage time becomes much shorter. Many people keep their coffee longer than the optimal storage time and continue to enjoy it for many more weeks.
